Las Vegas is always adding new reasons to make a reservation. If you’re ready to eat like you’re in the know, these are the new restaurants you need to hit in Las Vegas this year.

Table of Contents

1. Stubborn Seed

Tucked inside Resorts World Las Vegas, Stubborn Seed brings Michelin-starred chef Jeremy Ford’s Miami magic to the Strip. Ford, known for his Top Chef Season 13 win and James Beard credentials, makes regular appearances but it’s the food that keeps diners coming back. The new restaurant’s seasonal tasting menus pull no punches with its winter truffle ricotta gnudi and butter-poached bay leek, just to name a few.

At the bar, the exclusive Las Vegas-only Guilty Pleasure Burger—double onion smash patties with smoked beef bacon—is already building its own cult following. Wash it down with the house-favorite Kill Dill cocktail and you’ve got yourself one unforgettable night.

2. COTE Korean Steakhouse

Kobe beef

Kobe beef is considered as the gold standard of steak.

COTE is America’s only Michelin-starred Korean steakhouse and it’s finally landing in Las Vegas in 2025. Opening in The Venetian’s newly renovated expansion, COTE brings its signature mix of smoky Korean BBQ and classic American steakhouse experience to the Strip. At each table, smokeless in-grill cooking is expertly managed by servers who handle prized cuts like A5 wagyu from Kobe, Sendai, and Miyazaki, along with thick-cut pork belly and meticulously dry-aged steaks.

3. Gjelina

Opened in late December 2024, Venice Beach’s beloved Gjelina stays true to its roots: simple, seasonal, and produce-forward, with just enough gourmet edge to fit right in with its new Sin City neighbors. The wood-fired pizzas are an easy win (the house-made chorizo with tomato cream sauce is a standout) while the grilled kabocha squash with miso glaze and pomegranates shows off Gjelina’s farm-to-table DNA. Gjelina is located in The Venetian Las Vegas.

4. ai Pazzi

Another Top Chef-helmed new restaurant that’s worth putting on your Las Vegas shortlist is ai Pazzi. Opening in Summerlin’s JW Marriott this July, ai Pazzi brings celebrity chef Fabio Viviani’s soulful yet sophisticated Italian cooking to the Las Vegas suburbs. The menu, which is all about elevating classic Italian flavors with premium ingredients, includes the lobster linguini with cherry tomato and lobster butter, short rib agnolotti with Taleggio crème and black truffle, and the impressive bistecca alla Fiorentina—a massive dry-aged porterhouse.

As for dessert, their roasted white chocolate tiramisu and sticky toffee date pudding are decadent showstoppers while the cocktails are playful and Italian-inspired.

5. Lucia Mexican Grill

Discover the best tacos at Lucia Mexican Grill.

If you’re searching for Mexican food on the Las Vegas Strip, Lucia Mexican Grill at Virgin Hotels Las Vegas should be on your radar. With a design that channels Tulum’s coastal vibe (bold murals, moody lighting, and a bar built for long stays), the newly-opened restaurant in Las Vegas leans into the modern cantina playbook without feeling cliché.

Lucia’s menu offers a variety of traditional Mexican dishes with a contemporary twist. Highlights include queso birria tacos loaded with flavorful, slow-cooked beef and fire-grilled arrachera for steak lovers. The restaurant also features molcajetes, ceviches, and weekly specials, including Taco Tuesday with $5 tacos.

6. Amaya Modern Mexican

Led by Michelin-starred chef Jason Mcleod, Amaya Modern Mexican isn’t your standard taco-and-margarita spot. Two-pound lobster in chili cream sauce, melt-in-your-mouth birria short rib with corn purée, and fresh ceviches are just some of the headliners in Amaya’s coastal-inspired menu. The cocktails are next-level, too. The Flor de Paloma with hibiscus foam is as pretty as it is tasty and the Fuego Volcan brings just enough heat.

7. Copper Sun

Debuting at Resorts World Las Vegas, Copper Sun joins the growing list of Las Vegas destinations that redefine fine dining. This new restaurant reimagines traditional Inner Mongolian hot pot through the lens of fine dining. The star of the show is an eight-hour bone marrow broth that’s rich, silky, and built to carry the flavors of the premium proteins you’ll dip into it. The premium proteins offered include exclusive cuts of lamb and marbled beef, alongside house-made noodles and seafood.

8. Tamba Indian Cuisine

Tamba isn’t your typical Indian restaurant. The menu, which was created by Michelin-acclaimed chef Anant Singh, is an ambitious mash-up of Indian flavors with a little bit of everything from around the world. And its kitchen uses a wide variety of fire-powered tools, from clay tandoors and Josper ovens to a live-fire Mangal grill and wok. Tamba’s signature dishes include crispy baked samosas with zesty green chutney, purple cauliflower with green coconut curry and roasted tomatoes, and charred octopus paired with beetroot aioli.

9. The Guest House

The Guest House may have started in Austin but its Vegas outpost at Town Square is a standout new restaurant in Las Vegas that offers plenty of flair. Chef Todd Mark Miller’s menu offers creative new American dishes with standouts options like spicy rigatoni with Calabrian chili, braised short rib layered with mushroom ragout, and a rich foie gras French toast you’ll only find in Vegas. The cocktails are fun and creative—some even come with playful, Alice in Wonderland-inspired presentations.

10. Keke’s Breakfast Cafe

At Keke’s Breakfast Cafe, everything’s made fresh. No microwaves, no shortcuts, just solid breakfast classics done right. This Florida favorite, which recently opened a location in Las Vegas’ Blue Diamond neighborhood, offers a large menu for breakfast, brunch, and lunch. Expect fluffy pancakes loaded with fresh fruit and real whipped cream, overstuffed omelets packed with veggies, and thick-cut waffles that beg for extra syrup. Their Eggs Benedict, another must-order, is served with poached eggs and creamy hollandaise.
